
Fork Biscuits
8 ozs soft butter
4 ozs castor sugar
10 ozs self raising flour
Cream the butter, add in the castor sugar, sifted flour and mix just until it all comes
together. You could also put all three ingredients into a food mixer and mix slowly
until all the ingredients come together. At this stage the dough can either be used
right away or put in the deep freeze of kept in the fridge for up to a week.
When required bring to room temperature and form into small balls the size of a walnut.
Flatten them out onto a baking sheet using the back of a fork and allow room for
expansion.
Bake in a preheated oven 180c for 10 mins approx. Allow them to cool slightly before
removing them from the tray. Place them gently on a wire rack to cool completely. I
decorate them if different ways depending on my mood and occasion, melted chocolate
drizzled over them always works or sometimes a generous dusting of icing sugar is just
the job. Keep them small enough so that each one is a melting mouthful (less guilt)
