Omg Strawberry and White Chocolate Tart

The name for this tart came about because everytime you bring it to the table, someone will say, oh my god , that looks amazing. 

For the pastry:

6 oz plain flour

3 oz butter

3 oz caster sugar

1 egg

For the filling

200grms white chocolate

250grms mascarpone cheese

180mls cream whipped

500 grms fresh strawberries.

First make the pastry either by hand or in the food processor.  Sift the flour, rub in the butter, add the sugar and bind with the egg until it comes together in a ball.  Flatten, cover and chill the pastry for at least 30 mins.  Then between two sheets of cling film or parchment paper, roll out the pastry until it is bigger than your tart tin (12 inch)  Line the tart tin with the pastry and chill again for at least 30 mins (this will prevent your pastry from shrinking when cooking)  line the tart tin, with the pastry in it with parchment paper and fill with baking beans or any dried beans and bake blind at 180c for 25 mins until the pastry is golden and cooked through.

Allow to cool completely.  Meanwhile assemble your filling.  Very gently melt the white chocolate in a dish over a pan of simmering water.  The bottom of the dish must not touch the water.  Mix the melted chocolate the  mascarpone and whipped cream and spread into the cooled pastry base. Slice the strawberries and arrange, pointed side up in circles.  Dust with icing sugar and prepare to wow your guests!!
