Frittata with Fresh Herbs and Goats Cheese
4 large organic eggs
200mls cream
a bunch of spring onions, chopped
a knob of butter
3 tablespoons of chopped fresh herbs
Maldon Sea Salt and freshly ground black pepper
About 100g of soft goats cheese. (you can substitute any cheese of your choice.)
Melt the butter in a pan over a medium heat and toss in the chopped spring onions, season with salt and pepper and allow the onions to sweat for a few minutes. Meanwhile in another bowl whisk the eggs, cream, herbs and a pinch of salt and pepper. When the spring onions are softened, pour the egg mixture in and cook it on a gently heat until the mixture looks firm around the sides and still wobbly in the middle. Break the cheese into pieces and scatter over the top and place the pan under a hot grill until the cheese is melted and the frittata is puffed and golden. (about 4-5 mins.)
Serve with a good green salad. Delicious for brunch or light supper.
