Summer Salad with Zesty Dressing

Summer Salad with Zesty Dressing

Serves 8

2 mango or papaya fruit cut into chunks.

2 ripe avocados cut into chunks

½ red onion chopped

1 cucumber, peeled, deseeded and cut into chunks

Seeds from 1 ripe pomegranate

A large bunch of fresh coriander chopped

50g cashew nuts, toasted and chopped

Dressing.

4 tablespoons natural yoghurt

2 tablespoons mayonnaise

a small bunch of fresh fennel finely chopped

zest and juice of 1 orange

salt and pepper.

Prepare all the fruit, veg and nuts and arrange in a bowl. Mix all of the dressing
ingredients together and drizzle over the salad or serve on the side so that people can
help themselves.
